10 reasons why you should not drink extra hot coffee

Choux Cafe, Swanbourne

I recently read up this article about chef Emmanuel Mollois from Spice Magazine spring edition. He is one of those French chef that migrate to Australia and become quite popular due to their strong expertise. He is now a pastry chef and owner of Choux Cafe at Swanbourne, after reading this article, i drove down to his cafe the next day. On the wall of Choux Cafe, there are heaps of newspaper and magazine article about chef Emmanuel, and of course he is most famous for his pastries. He claimed that all the pastry in the cafe are homemade including jams and sauces too. I went into the cafe, on the display, there are array of colourful macaroons and also all sorts of sweet tarts/pie, cakes and savoury pastries too. We picked out 2 desserts out of all kind on offer, the one on the left is white chocolate & vanilla francais, it looks pretty and intricate too. The while layer on the outsite is obviously white chocolate but in the inside, it was white choc & vanilla mousse

Spring Lamb, Summer Berries

. Bought this lovely pre-package leg of lamb from Woollies the other day, it weigh about 600grm and it costs me $11, not bad for a deal i think! I roast them with some garlic, seas salt + cracked pepper and rosemary for about 1 hour @ 200C. I followed the instruction to roast them for 30mins per 1kg, i tried roasting for 20mins, but the meat was still raw at the centre, after having much testing, i pulled out after 1hour and leave them to rest on a wire rack. If my oven was functioning properly, i would have a pinker lamb, but alas it's not a bad effort, the lamb still tasted good. To go with the lamb, I've made some ratatouille, with much love and precision cutting putting the dish, the ratatouille tasted really good, it was such a good side dish, the tangy-ness from sherry vinegar goes well with my roast lamb. Pizza Bianca, Spanish Chorizo

Pizza Bianca was on tonight's dinner menu, made the dough fresh at home. The only problem i had while making the dough was where should i put them to proof the dough? I can't seems to find a warm spot in the house. So I've tried putting the dough into a stainless steel bowl, wrapped them with cling film then put them under the sun.Not really working that well. It just sprung my mind that i could have put them ontop of the coffee machine! It works fine, no, it works well instead. NOTE TO SELF: COFFEE MACHINE NEXT TIME!! After cooking them into a not so well evenly heated oven, they turned out alright, the dough taste a bit overworked though! I guess that could be because the Kenwood Chef Mixer that i have wasn't working that well in small batches! I ended up using hand to form the dough into a small ball, the machine is just not forming them together! While thousands of sun worshippers and swimmers heading to the beaches or rivers for some sun and water. For me, i'd rather stay indoor and make some wonderful homemade lemonade. Isn't that what you need on a hot day like this? I'd made some sugar syrup, just put water and sugar in a pan on the stove, until the sugar completely dissolve into the water. I plucked 2 ripe lemon from my backyard, zest then juice, add them into the sugar syrup. Add about 2 cups of COLD soda water, maybe some mint leaf to freshen it up. Voila - Homemade Lemonade! It is very nice for summer especially when you have a couple of friends coming over for lunch, add some rum or tequila or any spirits of your kind, you'll get a bloody good cocktail! Enjoy~

Greens & Co., Leederville

If you have been to Oxford St, Leederville but never heard of Greens & Co., that's ok, because most people would remember their decor more than their name, after all the money they spend on lanterns, light bulbs and Ikea's furnitures, I don't think they have much left on their pocket to invest on a new and visible signage. But that's alright, because people know them as the coffee shop with lotsa lanterns on Oxford St, and this is also what i like about them. Not only that they have good coffee but also a wide selection of pastries and cakes. When me and my mate was standing in front of the display fridge, we couldn't help to contain our joy, "they all look good", we have no idea which one to choose from, and we ended up getting a honeycomb brulee tart. On the downside, their ordering system is a bit of a mess, you order your drinks at the coffee machine, you wait there and you pick up your goodies and pick a comfortable chill out spot for you

Lamb Burger

Made Lamb Burger at home the other day. Lamb mince is a quick sales from Coles, perhaps only cost me about $3 for 400grms Put in some onion, garlic, ground cummin, fresh herbs, salt + pepper, a bit of ground cinnamon and some olive oil. Shape them up into patties with love. Grilled them until just cooked. Brumbys wholemeal buns toasted, checked! A bit vege for a balance diet. Put them altogether with a dollop of mint + sour cream Succulent lamb burger at only AUD$3, why pay for $18 for a burger out there? It's just a little fancy!

You can only find the finest coffee at Epic Espresso , tucked away at the corner of Outram St and Hay Street in West Perth. There's always coffee lovers rushing in and out of the coffee shop, but there are also coffee lovers whom sit back and relax the nice cuppa whilst chatting up with their peers or reading the magazine. What i love about them is not just the coffee bean but also the consistency from the barista; they never send out a sub-par quality cup of coffee. *check out the latte skill as well* They roast their own coffee bean, you can buy them in 250grm pack for $10.50 (if i am not mistaken), if you wanted to brush up your barista skill, they have different levels of classes available for all coffee fans. Settler's House, York

We stumbled across this hidden little gem a year ago when we're on our way back to Perth from Beverly for Wildflower trip. Possibly, the best cheesecake I've ever had in WA, there were a few different flavour cheesecake displayed in the fridge. Baileys, Kahlua, Cookies and Cream, Strawberry just to name a few, they seems to just make cheesecake! But without disappointment, we had the Baileys cheesecake and it was superb, just enough Bailey to taste, leaving a tinge at the back of your tongue, and yet you can still taste the creaminess and velvety from the rich cheese, not to mention, the portion size was huge, it is enough to share between 2. This year, we were around the area, and we went back just for the cheesecake! Something changed though! They are making less cheesecake now, my beloved Bailey's flavoured cheesecake wasn't on the display fridge anymore, and the cheesecake that are on the display look a bit on the edge. Have you watch the latest cheeky McDonald TV commercial yet? The one that featured the almighty angus beef burger? The one that's a little fancy? The one that everyone said was really good, like real burger? The TV ad was making us drooling over the burger, yes sure i'll have to try them one day, and yes i did. Everyone whom i know, whom have tried it said it was bloody good, after having try it myself, i have one word, only one word - SUCKS! you can see from the picture that the beef patties was actually really dry! It actually did gave me a hard chewing the burger down, it was way to dry to eat em'. I wouldn't blame my mates who said it was good, I'll just blame it on the inconsistency that Maccas deliver. You just can't ask for too much from a 16yrs old who knows nothing about cooking the beef patties right!
